🍫 Low Carb Vegan Chocolate Cookies Recipe
Ingredients
1 cup pumpkin puree (use kabocha or Japanese pumpkin for best texture)
1 cup almond flour
1/2 cup dried apricots + 1 tablespoon coconut oil
(Blend the apricots with the coconut oil until smooth. For a sweeter version, use 1 cup of apricots or add 1/2 teaspoon of xylitol.)
1 teaspoon baking soda
A pinch of sea salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
3 oz (about 80 g) dark chocolate (70% cacao or higher), chopped
1/2 teaspoon ground ginger
Instructions
Preheat your oven to 350°F (180°C).
In a large bowl, combine all ingredients except the chocolate. Mix well until smooth and fully combined.
Fold in most of the chocolate, reserving a few pieces for topping.
Line a baking sheet with parchment paper and drop spoonfuls of dough, leaving some space between each cookie.
Add the remaining chocolate pieces on top.
Bake for about 35–40 minutes, or until golden brown.
Let cool completely before serving — the cookies will firm up as they cool.
These low carb vegan chocolate cookies come out soft on the inside and slightly crispy on the outside — the perfect guilt-free treat!
